Low and behold…. the majestical Caramelized Roasted Carrots….
1 Lb. Carrots
2 Tbsp. Butter
1/2 Cup Brown Sugar
Preheat the oven to 450.
First, brace yourself with a glass of Merlot then get to trimming and peeling the carrots…
Cut carrots into matchstick sized pieces about 2″ long.
*My carrots were skinny because they aren’t really in season here…. sooooo…. there is that…..
Place carrot sticks in a baking dish and cut the butter into cubes to scatter about the dish.
Bake for 20 minutes then stir in the brown sugar and toss a bit to evenly coat them.
Bake an additional 15-20 minutes then serve hot.
